My friend recommended this recipe to me and told me what she did to change it up a bit and I took it and made it to my liking. The original recipe is down below, so check it out if you are interested!
Here is what I did:
3 chicken breasts
1 - 8 oz cream cheese, at room temp
1 packet of ranch dip mix
1/2 a bottle of buffalo sauce
1 cup grated cheddar cheese
Ranch and blue cheese dressing
Preheat the oven to 375 degrees. I sprayed an 8x8 throw away foil pan with cooking spray. I cut the chicken breast on each side, careful not to cut all the way through. Set aside.
Add the cream cheese, 1/2 c cheddar and ranch dip mix and stir well to combine. Spoon the mix into each piece of chicken. Place the chicken in the pan and add buffalo sauce. The original recipe said to brush 1/2 c of sauce over, but I poured half a bottle in. I made sure each piece was coated. I baked until the chicken was done. Original recipe said to bake for 25-35 minutes, but mine was not cooked through. So, it took about 45 mins or so. Once it got close to being done, I did top with the remaining cheese so it could get all melted before being done. Once I plated it, I drizzled ranch on mine and blue cheese on my husbands.
I served with a side spinach salad.
I was a little worried about this one. But it is now one of our favorites. SO GOOD and not as hot as I was expecting. Definitely a keeper!
